Blueberry Ginger Smoothie (with Kale)

Blueberries and Ginger.. who would have thought that combo would be good?! This smoothie is just as healthy as it is delicious!

Now I know many of you are a bit timid when it comes to using Kale and want to stick to your “safety spinach”, but I promise you can not taste even a hint of the kale bitterness or the texture. While Spinach is healthy (and definitely one of my fav’s too), Kale has the upper hand when it comes to nutrition. For example, Kale has 4 times the amount of Vitamin C when compared ounce to ounce! Kale is not expensive, I just bought a bunch of organic Kale for $2.75 at Whole Foods. So give it a try in this yummy smoothie! The purplish red color of this smoothie does a great job hiding all those healthy raw veggies.

Blueberry Ginger Smoothie

Directions:

Mix the following ingredients into the blender (I use a Vitamix)

  • 2 leaves of Kale
  • 2 carrots
  • ½ cup Frozen Cherries
  • 1 cup Blueberries
  • 1 apple
  • 1 banana
  • 1 cup Milk
  • ½ inch slice Ginger
  • 1 cup Ice

Blend on High for 30 sec or until smooth.
