I don’t know about you, but there are many nights where by dinner time I am ready to put myself in a time out! (Can you tell I have a toddler-ha!) The last thing I want to do is make a big meal with lots of dirty dishes to clean. If this is you, resist the urge to feed your family at the local drive-thru and try out this quick and easy crock-pot recipe instead! Simply throw all the ingredients in the crock-pot in the morning and by dinner time it will be ready to serve with barely any mess!
As an added bonus… this recipe is the first part of a 2 dinner meal plan that I use to stretch my budget and time! So make sure to make enough for left overs and follow the link at the bottom of this post for an excellent 2nd meal that your family will LOVE!
- 16oz Chicken Broth
- 5-6 Chicken Drumsticks
- 2 Potatoes (halved)
- 4 Carrots (sliced)
- 1 small onion (sliced)
- 3 cloves garlic
- 2 tsp Salt
- sprinkle of Pepper
- 1 tsp Lemon Pepper
- 2 tsp Herbes de Provence
Through all the above ingredients into your crock pot and cook on low (about 6 hours). If you do not have a crock pot you could also cook on low on top of the stove (covered).
Serve the chicken and veggies… Enjoy!
Don’t forget to save all the juice/broth and leftovers for our 2nd day meal! I simply let the crock pot cool and then store the entire thing with the lid in the fridge!
